
Here it is, the first post to this blog. Welcome. It has been a process to get us to this point. It started on the day that my brother, and partner, Todd DeMint encouraged me to look for a property that would be suitable for a restaurant. Of course being a longtime resident of the
Heritage Hill/
East Hills area, specifically 933 Wealthy St. I was enclined to CHOOSE a spot in the neighboorhood. I had watched Wealthy St. grow and change over the last decade and I thought that now was the time to make a move.
Jana and I had just got back from
a scooter trip, where we drove a scooter from Minneapolis to Chicago, and I hopped on the new scooter that we bought and rode around writing names and contact numbers down for potential properties. I called Barry from
Bear Manor Properties and met with him at 1017 Wealthy St. to have a look.
Ironically, after I decided that I wanted the space, after it had sat empty for over a year, another restaurant settled on it before I could. So Barry says to me, he says, Cory, Would you be interested in a Green Building space next door that is twice the money and twice the space and twice what you had planned on for starting a first restaurant? And I said NO! But then I said YES! and here we are. The lease was signed this past Friday after much negotiation and many mechanical hurdles. This blog will keep you updated as to the progress of Building a Cheetah.
