
Hi Y'all. I have been getting several emails about employment, enough of them to make me write this blog post.
I am not hiring as of right now. There are still several things that I need to take care of before I can even think about hiring people, like painting, lighting, permits, health dept, etc... However, I do appreciate everyone's enthusiasm to support a locally owned, independent, privately funded (by people who are broke) venture.
I think that I have my kitchen all staffed with people who I have worked with over the years, but I will be hiring servers, to-go people, dishwashers, and a zoo-keeper to scrub down the cheetah, that is a joke, for those of you who are offended by the fact that I might actually employ a live cheetah.
Here is pretty much what I am looking for...
Number one, you must LOVE FOOD! You must be passionate about eating it, cooking it, watching other people enjoying it, rolling around in it and really want to pass on information about why it is better to use quality ingredients and not "cut corners" when it comes to creating something as simple as for instance, a turkey sandwich. I could go on and on here, but for those of you who have gotten it by now, you get it.
There are reasons that we are choosing things like Pepsi instead of Coke, and local meat instead of Wal-Mart meat, and if you get that, then you get it.
I appreciate people with a sense of humor, who like to cross lines, and are not shy, are happy and smile genuinely, but are intelligent enough to know that it is still a restaurant and we will have all kinds of personalities dining here; to be successful, we must be smart enough to recognize these different types of people and treat them accordingly given their specific needs. I am loud and the picture of the waiter pouring coffee and missing the cup kind of sums up my sense of humor, but I also realize that there will be fancy ladies that come here that would rather have their coffee IN the cup.
I will not tolerate people coming in late and hung over and calling in sick and having a million cigarette breaks and that is as mean as I get. I just can spot bullshit a mile away and there are lots of people who want jobs like this that are not alcoholics. Sorry I had to say that, but I really feel that there are better things to focus your attention on rather than booze and bullshit.

But if you REALLY think you are the type of person I am looking for, then maybe we should meet for coffee or something, but emails work best. I am not really concerned with the experience that you have had, because everyone needs the chance to start somewhere, but I am definitely looking for someone who lives in the neighborhood, or at least no more than a few miles away and wants to have a job long term in a cool neighborhood bistro and be a complement to its success.
