After a long year of trying to get this building done, The Electric Cheetah is hiring servers, cooks, and dishwashers preferably who walk or ride a bike or moped or scooter to work and if you live in the neighborhood it is a plus as well.

For those of you who do not know what the Electric Cheetah is, we are a local independently owned Bistro that features local, organic, from scratch cuisine. We are a full service restaurant that will be unlike any restaurant that you will work in. I expect that applicants be human beings who can communicate like adults and not Robot restaurant employees. We have been in the business for many years and the typical garbage that goes on in restaurants will not fly with us. We just are looking for people that have a passion for food and the Wealthy/East Hills area and want to help us build a local staple in the community.

Come as yourself just ready to talk about food as we love it and love talking to people who share our passion.

This sign was taken from a "Dream Dinners" location that went out of business. We brought the circle frames to a place that printed us new cheetah heads for it and made this new cheetah head sign for the window that will always shine bright.

Here are a few more things to see. Todd and I trimmed out the door in the back hallway, the entrance to the kitchen, and hung these swinging doors. Also the Cheetah sign is hung in the window thanks to a bracket that we fabricated and painted. This weekend, the concrete bar top will get finished and I can not wait to see how it turns out.

The forms come off.

You can also see that almost all of the drywall is put up. Thursday, the diamond grinder comes out and the bar starts to be polished.

Wet Bar, get it, WET BAR!

The glass that will be embedded in the bar top.


This is recycled brown glass that was poured into the concrete mix, 108lbs total. When the bar top is wet sanded with diamond polishing wheels, the glass will be smoothed out and all of the little bits will start showing up and shine like the top of my head.

Ode to a Duct

Pew!

Here is the Church Pew that I got for free from a friend who has the other one that matches it. He said that if I came to pick them up and drop one off at his house, then I could have the other one for the restaurant. Now I am not sure what he did with his, but as you can see from the pictures below, pre stripped, stripped and sanded, and stained and sealed, it came out pretty good and will make you feel holy while you wait to be seated at the Cheetah!

The stools that you are about to see came from Delton MI. Our Buddy Wayne, made arrangements to let us into a storage unit that he had that was full of old, greasy,restaurant equipment that was falling apart and he was giving it away for next to nothing. In fact, I think that I told my brother, Todd, that I did not want the stools at first, but he made me put them in the van. All together we got 8 of them for $40 and they are SOLID oak. Now that I see what they look like when they are refinished, it was money well spent.

Cheetah Chairs Style A and B


So we went to Southfiled and got these tables and chairs and the chairs were all dirty and sicko. But thanks to a $20 roll of upholstery from Craigslist and a bottle of Krud Kutter, they are cleaning up real nice. There are two Styles: A and B. The A Styles will be used for the tables that seat two and four and the B style will be used for the larger tables. GREAT!

The restaurant is getting done. Things are moving along and we are starting to get down to details, which is fun. The walls are up and the electric, plumbing, water, and gas lines are in. I am excited to get in there and paint and decorate and get the kitchen in order.

It is the era of the cold soup.

GAZPACHO. I though a traditional well known start to the cold soup season, but look out cause it will get wierd. Let me break it down for you. All fresh. I put my twist on this classic soup by adding a plaintain chip and a hard boiled egg. I think that we may expirement with a vapor in a fancy dish, so you may want to go and check it out. Aaaaahh! Gay Paris. Sparrows. Today!

White French Onion Soup is inspired by the classic French Onion Soup. It is made with leeks, chives, and scallions, and a creamy base made up from chicken stock, cream cheese, ricotta, and Parmesan. Of course I had to put some lemon and fresh dill in it, and a few toasted baguettes and what would french onion be without some melted provolone cheese on top. To top it off, a little gremolata, which is made from chopped lemon zest, garlic, and parsley. Get Some!

Smoked Tomatoes For Eveyone.

Today at the Sparrows Cafe and Newstand, I will debut my smoked tomato soup. It has applewood smoked tomatoes, that were smoked by me, and grilled onions and pale ale in the base of the soup and that will be served hot. On top of the hot soup will be a cold spring onion, ricotta cheese, cream cheese, parmasan cheese, and garlic ravioli. It came out very good and all of the raviolies are hand made by me. Scratch cooking is GREAT!

The Purple Panda

After realizing that the Billy Goat's Soup turns purple when you add the beat chip to the top of it, it reminded me of the Purple Panda that appeared on the both Mr. Rogers Neighborhood and the Polka Dot Door children's shows. So I think I am going to make a version of The Billy Goats Soup with purple potatoes, so it will be light purple to begin with and then strategically add the beat chips in the formation of the purple panda's face. I have told a few people this and no-one knows who the purple panda is, so here is a picture of The Purple Panda being interviewed my Mr. MacFeely. You will notice the beet chips the panda.

Wealthy Street Spring Flung

It is over and there was sidewalk soup in the form of The Big Ragout. There were not as many people there as I would have liked, but it was still a lovely day, but quite windy. So windy in fact that my new sign that i just built was blown over twice.


I did meet some people who did not know what that Electric Cheetah was, and gained some fans by pumping them full of soup. This is what it looked like.

Sysco Test Dinner

I went to the Sysco test kitchen and they gave me some samples of thier "all natural" line of beef and here is a picture of the dinner that we had where we sampled some top sirloin, tenderloin, and NY strip loin. I liked the sirloin best, followed by the strip and last was the tenderloin. THe whole table agreed. But it was a nice dinner and thank you Sysco for the snacks.

The New Sign Holder

I made this so wherever I go I can have my banner behind us. It is made from two 2x2's that I stained black, two patio umbrella bases, one 2x2 that spans across the back to keep it tight, and if you look close, I put two little fleur de lis' on top of the poles. It looks good and it will be very functional for indoor and outdoor catering anywhere I want to fly my colors.

So earlier this year, I was driving to Holland, and when I left the tail gate was on the trailer. It was very windy that day and when I got to Holland and stopped, the tailgate as gone. I have no idea what happened to it, I just hope that it popped off and slid to the side of the road and did not go through the front windsheild of someone's minivan.


I built a new tailgate today and since i use it most for the restaurant, I made a stencil and did this so it rules more...

Billy Goat's Soup

Staring tomorrow at the Sparrows, you can have some of this lovely, creamy, velvetly, potato and goat cheese soup. It has some roasted garlic in it and onions and I top it off with a crispy beeeet beeeet chip. It's Teats!

Meanwhile Bar Asparagus Bonanza!

It is a hit. If you did not make it, you missed delicious free grilled Michigan asparagus.
The sauces were most popular in this order:

1. Black and Blue

2. Charred Chili

3. Truffle and White Balsamic

4. Garlic Lemon Chive

5. Honey Date.

But, they all got eaten sprayed all over the top of 44# of asparagus, oh and Jana had a nice time too.

Earthy Delight

Underground soup now available at the Dog. It has carrots, celery root, turnips, parsnips, rutabega, red onion, garlic, russet potatoes, red potatoes, fingerling potatoes, sweet potatoes, spinach, toasted caraway, black pepper, and black truffle oil, all in a lovely mushroom and veal stock. Super flavorful.

Hi there friends. Tomorrow at the Sparrows, I will unleash my Grilled Michigan Asparagus Soup. With Michigan Asparagus season just getting underway, I thought that it would be appropiate to highlight one of Michigan's unique vegetables. Grilled asparagus is one of my favorite things to eat in the spring and summer and I tried to create a soup that tastes like you are spooning fresh-off-the-grill asparagus into your mouth. I used all the componants of my asparagus grilling technique and turned it into a delicious, lite, sensitive, spring soup. ENJOY!

Small Plates Example

This is what we had for dinner tonight and will be an example of a small plates item when that menu comes into effect about 2 months after opening. This is an antipasti platter that has grilled mushrooms, grilled asparagus, grilled sweet bell peppers, grilled spicy rattlesnake sausage, capicola ham, fresh mozzerella cheese, grilled red onions, grilled grape tomatoes, and a grilled corn relish, topped with chives, basil, sea salt, black pepper, and olive oil, and served with grilled sesame baguette, grilled multigrain baguette, fresh horseradish cream, and 5 pepper mustard on the side. My family enjoyed it.

Fried Chicken, French Fries, and this guy.

We went to the Sysco food show thinking that the focus was going to be on organic and green products, and while there were a few there, and we did find some things that were interesting such as a bakery in Muskegon who uses all natural products in thier bread and the assurance that Sysco's premium meats are from all hormone free and at least grain fed animals, the only other thing that we found was a lot of fried chicken,and companies showcasing thier lines of fried foods. Oh yeah, there were soooooooooooo many people there including this guy...

I had this idea to take a picture of the property everyday and post it so you can see the progress as the building is biult. I am sure that I will forget a few days here and there, or not be able to take a picture on certain days, but I will try my best. I am lucky I took a picture yesterday, because wait until you see what Day 2 looks like.

The Big Ragout Tomorrow at the Sparrows.

Look out! Here comes The Big Ragout! Tomorrow I will be delivering the first in my line of spring soups to The Sparrows Cafe and Newstand. This "Big Ragout" named after Carmine from the Laverne and Shirly Show, is a blend of roasted vegetables and herbs, blended and topped with organic yogurt and chopped chives. I found it to be very, very fancy indeed. It will also be serving free samples at the Meanwhile Bar from 4-6 tomorrow evening as part of our groud breaking reception. Get Some!
